  • 2 8 oz cream cheese softened
  • 2 1 oz dry ranch seasoning mix
  • 1 red bell pepper chopped- seeds removed
  • 1 yellow bell pepper chopped- seeds removed
  • 1 orange bell pepper chopped- seeds removed
  • 2 cucumbers chopped
  • 2 cups fresh broccoli chopped

Instructions

  • In a large mixing bowl, add softened cream cheese and ranch seasoning packets. Use a hand mixer (or stand mixer) to blend until smooth and creamy.
  • Wash all vegetables thoroughly. Remove seeds from the bell peppers, then chop the peppers, cucumbers, and broccoli into small, bite-sized pieces. (reserve a hanful for garnishing top)
  • Add the chopped vegetables into the cream cheese mixture. Stir until everything is well combined.
  • Spread the mixture into your serving dish and smooth the top. Add a little extra veggie mix on top for a fresh, colorful garnish.
  • Chill for about 30–60 minutes (optional, but makes it even better), then serve with crackers or pretzels.

Notes

This Creamy Ranch Veggie Dip is best served after letting set up in refrigerator for 30-60 minutes. This is a great dip to make a night ahead and then reserve the extra chopped veggies for top for garnish to add just prior to serving.
Serve this Creamy Ranch Veggie Dip with your favorite dippers like crackers or pretzels or even celery to keep it completely low carb.
