Ingredients
  

  • 1 20 oz can crushed pineapple, do not drain
  • 15 oz about 1¾ cups sweetened cream of coconut
  • 1 box yellow cake mix
  • 1 cup sweetened shredded coconut
  • 1 stick ½ cup unsalted butter, sliced into thin pats
  • ½ –1 cup chopped pecans optional

For Serving (Optional)

  • Vanilla ice cream
  • Whipped cream

Instructions
 

Preheat

  • Preheat oven to 350°F and lightly grease a 9x13-inch baking dish.

Layer the ingredients

  • Spread the undrained crushed pineapple evenly in the baking dish. Pour the cream of coconut over the pineapple.

Add the dry ingredients

  • Sprinkle the dry yellow cake mix evenly over the top. Do not stir.

Finish the topping

  • Sprinkle with shredded coconut and chopped pecans, if using. Arrange the butter slices evenly over the top.

Bake

  • Bake for 45–50 minutes, or until the top is golden brown and the filling is bubbling around the edges.

Serve

  • Let cool for 10–15 minutes before serving warm with vanilla ice cream or whipped cream.
