Ingredients
  

  • 1 lb chicken breast cubed
  • 1 packet dry ranch seasoning
  • 6 cups chicken broth divided
  • ½ cup diced celery
  • ½ cup diced onion
  • ½ cup diced carrots
  • 1 bag 12–16 oz frozen corn
  • 8 oz Velveeta cheese cubed
  • 1 cup heavy whipping cream
  • 1 box pasta of choice (rigatoni recommended) 16 oz

Instructions
 

  • Season the chicken: Place the cubed chicken breast in the crockpot. Sprinkle the ranch seasoning packet over the chicken and mix until all pieces are evenly coated.
  • Build the base: Pour in 4 cups of chicken broth. Add celery, onion, and carrots. Stir to combine.
  • Cook: Cover and cook on low for 6–8 hours or high for 4–6 hours, until the chicken is tender and the veggies are soft.
  • Make it creamy: About 30 minutes before serving, stir in frozen corn, Velveeta cheese, heavy whipping cream, and the remaining 2 cups of chicken broth.
  • Cover again and let everything melt together into a creamy soup.
