Chop up 4 small russet potatoes, 1 small white onion, 1 cup carrots, and ½ cup celery
Put all chopped vegetables, 1 tsp dried basil 1 tsp dried parsley, & 3 cups chicken broth in crock pot
Cook on low heat 6-8 hours OR high heat 4-5 hours
About 45 minutes before serving, brown 1 lb ground beef & add to crock pot
Add 3 tbsp melted butter & 2 tbsp flour in a skillet and cook until golden brown & bubbly (about 1 minute)
Whisk in 2 cups milk, ½ tsp salt, & ½ tsp black pepper then add to crockpot
Add 16 oz. Velveeta processed cheese (cubed) to crockpot and stir
Cook 30 more minutes then serve
