Instructions
Prepare the chicken
Cook and cool chicken if needed. Shred or dice into bite-sized pieces and place into a large mixing bowl.
Dice the vegetables
Dice red and yellow bell peppers into small pieces. Peel and dice the white onion, then slice green onions into thin rounds.
Add ingredients
Add bell peppers, onions, shredded cheddar cheese, spicy mayonnaise, and Greek yogurt to the bowl with the chicken.
Season and mix
Sprinkle in Cajun seasoning and stir until everything is fully coated and creamy.
