Ingredients
  

  • 3 cups cooked chicken shredded or diced
  • 1 red bell pepper diced
  • 1 yellow bell pepper diced
  • 1 cup white onion diced
  • ¼ cup green onions sliced
  • 1 cup sharp cheddar cheese shredded
  • ½ cup spicy mayonnaise
  • ½ cup plain Greek yogurt
  • 1 tablespoon Cajun seasoning
  • 1 teaspoon Cajun seasoning

Instructions
 

Prepare the chicken

  • Cook and cool chicken if needed. Shred or dice into bite-sized pieces and place into a large mixing bowl.

Dice the vegetables

  • Dice red and yellow bell peppers into small pieces. Peel and dice the white onion, then slice green onions into thin rounds.

Add ingredients

  • Add bell peppers, onions, shredded cheddar cheese, spicy mayonnaise, and Greek yogurt to the bowl with the chicken.

Season and mix

  • Sprinkle in Cajun seasoning and stir until everything is fully coated and creamy.

Chill or serve

  • Serve immediately or refrigerate for 30 minutes for even more flavor.
