1cupcooked turkeydiced into bite-size pieces
4cupsprepared stuffingboxed or leftover
1cupmashed potatoesleftover or freshly made
1cupItalian breadcrumbs
¼cupgrated Parmesan cheese

Instructions
Form mashed potato balls:
Scoop mashed potatoes into 1-inch balls. Place on a parchment-lined baking sheet and freeze for about 10 minutes, just until firm.
Mix stuffing & turkey:
In a large bowl, combine diced turkey and stuffing until well mixed.
Wrap mashed potato balls:
Take a small handful of the turkey-stuffing mixture and flatten it in your hand. Place a chilled mashed potato ball in the center and gently wrap the stuffing mixture around it, sealing it into a ball.
Prepare coating:
In a shallow bowl, combine breadcrumbs and Parmesan cheese. Roll each ball in the mixture until fully coated.
Fry until golden:
Heat oil in a pot or deep fryer to 350°F. Fry the bites in batches until golden brown and crispy, about 2–3 minutes. Remove and drain on paper towels.
