118 oz bottle barbecue sauce
1box Jiffy Honey Corn Muffin Mix
Ingredients called for on the Jiffy box
1cupmild cheddar cheeseshredded
1can corndrained
Sliced jalapeñosoptional
Honey butterfor topping
Instructions
Preheat the oven
Preheat oven to 400°F and grease a 9x13-inch baking dish.
Make the BBQ chicken layer
Add the shredded chicken to the prepared baking dish.
Pour the entire bottle of barbecue sauce over the chicken and mix until evenly coated. Spread into an even layer across the bottom of the dish.
Prepare the cornbread
In a separate mixing bowl, prepare the Jiffy Honey Corn Muffin Mix according to the package directions.
Add the cheese and corn
Stir the shredded mild cheddar cheese and drained corn into the prepared cornbread batter until combined.
Assemble the casserole
Pour the cornbread mixture evenly over the BBQ chicken and gently spread it across the top.
Add a few sliced jalapeños if you'd like a little extra heat.
Bake
Bake at 400°F for approximately 25 minutes, or until the cornbread is fully cooked and golden brown.
Add the honey butter
As soon as the casserole comes out of the oven, spread honey butter generously over the warm cornbread topping.
Allow the casserole to rest for a few minutes before serving. Scoop all the way to the bottom so you get sweet cornbread and smoky BBQ chicken in every bite!
