Bacon Ranch Spinach Tortellini Skillet

Ingredients
  

  • 6 strips bacon chopped
  • 18 oz tortellini frozen or refrigerator
  • 1/2 cup chicken broth low sodium
  • 1 tbsp ranch seasoning
  • 1/2 cup heavy whipping cream
  • 4 oz cream cheese softened
  • 2 cups spinach fresh

Instructions
 

  • Fry up 6 strips bacon cut into small pieces
    Use Softened cream cheese or place in microwave for about 20 seconds to soften up 
  • Bring a pot of water to a boil while frying up bacon. 
  • Once bacon is cooked clean out bacon and place on cutting board to shop up if you didn’t cut prior to cooking. Take a paper towel and blot off excess bacon grease. You will want to leave about a tablespoon of bacon grease in skillet. 
  • Add chicken stock, heavy whipping cream and ranch seasoning to that bacon grease whisking together once combined add softened cream cheese blend well and allow to come to a simmer but not boil. This will make the sauce for the dish. 
  • Once water comes to a boil add tortellini. Tortellini cooks super quick like 3-4 mins max. Once done strain the tortellini 
  • Once the cream sauce is well combined. Add a few hand fulls of fresh spinach - no need to chop if you don’t want to because these will wilt down when cooking. 
  • Once you add the spinach add the strained tortellini immediately. Combine well. 
  • Once combined add cooked crumbled bacon to the top and fold it in. 
  • Garnish with freshly grated Parmesan cheese.

Want to add more protein? A very easy way to do this is to use chopped rotisserie chicken. Just add at the same time you would fold in the bacon.
I always love to have frozen or refrigerated tortellini as meal helpers for last minute dinner ideas. So this is one thing that is a staple on my grocery list.
Don’t have bacon to fry up? No worries try using real bacon bits it’s not exactly the same full flavor, as you won’t have the bacon grease but works in a pinch!
We love cheese so if you do too, add freshly grated parmesan to top or even the grated will work too.
Also, when frying up bacon in the future keep a small jar of it in your cupboard for recipes where you need to add bacon flavor.  Experts recommend storing in refrigerator now for up to 6 mths. However, we have always left in cupboard and it’s been fine. So you decide for you!
