Ingredients
  

  • 1 lb ground beef
  • 1 packet taco seasoning
  • 1 box Jiffy corn muffin mix
  • 1 can corn drained
  • 1 can cream-style corn
  • 1 stick butter (melted) ½ cup melted butter
  • 8 oz sour cream
  • 1 cup Fiesta blend shredded cheese or more if you love it cheesy!
  • 1 individual-size bag of Nacho Cheese Doritos crushed
  • Nonstick spray or oil for greasing your pan

Instructions
 

  • Preheat your oven to 350°F (175°C).
  • Cook the ground beef in a skillet over medium heat until browned. Drain excess grease.
  • Add taco seasoning to the beef according to the packet directions. Mix well, then remove from heat.
  • Grease a 9x13 baking dish or cast iron skillet with nonstick spray or a little oil.
  • Pour the taco meat into the bottom of the greased dish and spread evenly.
  • In a separate bowl, combine the Jiffy mix, drained corn, cream-style corn, melted butter, and sour cream. Stir until well mixed.
  • Pour the cornbread mixture over the taco meat and smooth it out evenly.
  • Bake uncovered for 25–30 minutes, or until the top is set and golden.
  • Remove from the oven, sprinkle the top with shredded cheese and crushed Doritos.
  • Return to the oven for another 10–15 minutes, until the cheese is melted and the topping is slightly crisp.
  • Let cool for a few minutes, then serve warm and enjoy!
